Born during the COVID-19 lockdown by the team behind White Hats Restaurants, Brot Co. initially launched as a virtual kitchen to solve a local shortage of high-quality, reliable delivery for artisanal breads, pizzas, and croissants. Starting with a deliberately focused menu, the brand steadily built a strong foundation in sourdough craftsmanship before transitioning into a physical space.

The Civil Lines outlet at the historic Barwara Kothi was meticulously planned over a year to redefine the standard dining format. Designed as Jaipur’s first live experiential kitchen, the layout removes the barrier between the culinary team and the patrons. By bringing the baking and preparation process directly into the dining space, Brot Co. positions the guest as an active participant in the culinary experience rather than just a traditional diner.
